Behind the Smoke
The Smoking Jay didn't start in a restaurant. It started at backyard gatherings, Superbowl parties with the Zebras, or cookouts with family and friends going back decades; where every recipe got refined, every technique got tested, and every plate was made for someone Jay loved. When the doors opened at 6305 SE King Rd in Milwaukie, nothing changed except the address. We cook on a custom 500-gallon offset smoker and we do everything fresh to order — the mac & cheese, the beans, the Caesar, the chips, slaw etc... That means the wait is real. So is the food. We're not fast food, We're honest fresh food, made the way it was always meant to be made: slow, with intention, for people who deserve the real thing.
